1 apple, peeled and cored/sliced (100g)
1/2 cup (130g) prepared 28GO Vanilla Protein Pancake Mix (52.5g dry weight) 1/4 tsp cinnamon (1g)
Toppings, optional – whipped cream, ice cream, Greek yoghurt, custard

Method
Preheat the oven to 180 degrees Celsius.
Peel, core and slice the apple into 1/2 cm thick pieces. Place apples in a microwave safe dish and add 2 tablespoons of water. Microwave apple on High 1-3 minutes or until tender. Remove from the microwave and allow to cool slightly.
*optional to skip step 2 and use 1/3 cup canned pie apples instead of fresh apple.
Meanwhile, prepare the pancake mixture per packet directions (note: this recipe only uses 1/2 cup prepared mixture or 1.5 serves of the dry mixture).
Pour 2/3 of the pancake mixture into a ramekin. Top with the cooked apple sliced and sprinkle over the cinnamon. Cover the apples with the remaining mixture and place in the oven for 15-20 minutes until golden.
Serve cold or warm with optional toppings.
